RECENTLY I invited two chefs for dinner. They are friends of my daughter and her partner and I wanted to surprise them (if I could) with my Russian cuisine. I was nervous, I should admit because what if my cooking was not up to their professional standards! First course, Borsch, did not happen. Needless to say a surprise to all, but my Russian Fish pie was a winner! This is how it was cooked: Preheat oven to 200 deg C. Baking time: approximately 40 to 45 minutes Use two frozen sheets of puff pastry or make your own dough (any kind of dough will do but do no use sweet pastry) Two cups cooled cooked rice, 1 tin of canned red or king salmon, salt and pepper as desired, one beaten egg, one medium onion diced, one and a half tablespoons of butter Place onion and butter in a pot, and cook until onions are sauteed. Mix all ingredients together in the pot. Place one sheet of pastry in greased pie dish and press down slightly. Place fish mixture on the top and then cover with second sheet and seal and brush with some beaten egg. Bake in oven until golden brown. Easy and tasty! Chopped hardboiled eggs could be added to filling mixture, which makes pie even tastier. Enjoy!
